Background: food-borne diseases are one of the most widespread problems in the world today. They can appear in the community as outbreaks. Detection and investigation of these illnesses constitute challenges for the public health system.
Objective: to describe the outbreaks of food poisoning researched at the Provincial Center of Hygiene, Epidemiology and Microbiology (CPHEM) of Las Tunas, during the last ten years.
Methods: a cross-sectional descriptive observational study was carried out on the food poisoning outbreaks reported in the province of Las Tunas, from January 2008 to December 2017. The universe was made up of 110 outbreaks with samples studied at the CPHEM laboratories. The following variables were assessed: total of studied outbreaks, positivity of the culture, place, contaminated food and isolated microorganisms. The data were processed according to descriptive statistics.
Results: in 59 outbreaks (55,63 %) isolation of the causative microorganism was obtained. The years with the greatest positivity in isolation were 2010 and 2011, with 75 % and 71,42 % respectively. 44 (74,57 %) of the outbreaks with isolation occurred in family homes. 57,31 % of microbiological isolations occurred in confectionery products. In all the years coagulase-positive Staphylococcus was predominantly isolated, which was present in the whole sample in the middle of the years of the study.
Conclusions: outbreaks of food poisoning researched at the laboratories of the Provincial Center of Hygiene, Epidemiology and Microbiology of Las Tunas were described, with a predominance of the isolation of coagulase-positive Staphylococcus.
